White Peach Energy Tonic
White Peach Energy Tonic
A precise, luminous energy drink built around the clean perfume of white peach and the sharp lift of carbonation. Its sweetness is restrained, its acidity exact, and its finish deliberately dry, leaving the palate refreshed rather than coated. The balance depends on clarity: fruit first, brightness second, and a disciplined, tonic-like structure throughout.

Taurine: 1.000 g
Acidity regulator: 1.000 g
Caffeine: 0.080 g

Method
1. Chill the serving glass thoroughly. The drink must be served cold to preserve carbonation and sharpen the peach aroma.
2. In the mixing vessel, combine the white peach juice concentrate, citric acid, taurine, acidity regulator, caffeine, sweetener, flavoring, preservative, niacin, pantothenic acid, vitamin B6, vitamin B12, and color. Stir for 30 to 45 seconds until fully dissolved and visually uniform. The mixture should appear smooth, with no visible particles.
3. Add the carbonated water in a slow stream, stirring only gently for 10 to 15 seconds to preserve the effervescence. The liquid should remain bright and lively, with a fine, persistent bead.
4. Strain immediately into the chilled serving glass. The finished drink should be clear, highly carbonated, and pale peach in tone.
Plating and serving
Serve at once in the chilled glass, without garnish. The drink should present as clean, brisk, and exact, with a crisp mousse of bubbles and a dry peach finish.
Professional notes
Carbonation is the architecture of the drink; handle it with restraint. The concentrate and acids must be fully dissolved before the water is added, or the finish will read unevenly. Serve immediately after mixing, while the effervescence is at its most precise.
