  • Method



  • 1. Place the cup or mug on the scale and add 2 g coffee to the filter or brewing device. Level the grounds evenly so extraction begins uniformly.


  • 2. Heat 33 g water to 92–96°C. Pour steadily over the coffee in a controlled stream, wetting all grounds within 10 seconds.


  • 3. Allow the coffee to brew for 2 to 3 minutes, depending on the grind and filter used. The liquid should draw through cleanly and appear deep brown, not muddy.


  • 4. Remove the filter or brewing device as soon as extraction is complete. The finished coffee should be aromatic, clear in flavor, and free of bitterness from over-extraction.


  • Plating and serving



    Serve immediately in the warmed mug. The coffee should present as a small, concentrated cup with a clean surface and a direct, elegant aroma.

    Professional notes



    Use water just off the boil, never boiling hard, or the cup will turn aggressive. Keep the grind fine enough for clarity but not so fine that the finish becomes chalky. The balance here depends on precision: too much water thins the cup, too little leaves it austere.
