Creamy Chicken, Cauliflower, Mushroom, and Spinach Skillet

Headnote

This skillet dish is built on restraint: properly browned chicken, softened aromatics, and a cream sauce that binds rather than overwhelms. Cauliflower gives the dish structure, mushrooms bring depth, and spinach finishes it with freshness and balance. The result is a composed, self-contained plate with the clarity of a well-made pan sauce.

Cook time: 20 minutes
Total time: 35 minutes

Equipment

1 heavy skillet, 28 cm
1 cutting board
1 chef’s knife
1 mixing bowl
1 wooden spoon or heatproof spatula
1 digital scale

Ingredients

Chicken
  • Chicken breast, trimmed: 140 g

  • Olive oil: 8 g

  • Butter: 10 g

  • Vegetables and aromatics
  • Onion, finely sliced: 25 g

  • Garlic, finely minced: 5 g

  • Cauliflower florets, small and even: 70 g

  • Mushrooms, sliced: 55 g

  • Spinach: 35 g

  • Parsley, finely chopped: 2 g

  • Sauce
  • Heavy cream: 30 g

  • Method

  • 1. Cut the chicken breast into even bite-sized pieces and season lightly with no additional ingredients beyond the listed components. Heat the skillet over medium-high heat for 2 minutes, then add the olive oil and butter. When the butter foams and begins to subside, add the chicken in a single layer and sear for 3 to 4 minutes, turning once, until lightly golden on the outside and just opaque at the edges. Transfer to a bowl.

  • 2. Reduce the heat to medium. Add the onion to the same skillet and cook for 2 minutes, stirring regularly, until softened and translucent. Add the garlic and cook for 30 seconds, just until fragrant.

  • 3. Add the cauliflower florets and mushrooms. Cook for 5 to 6 minutes, stirring occasionally, until the mushrooms release their moisture and the cauliflower begins to soften while still retaining a slight firmness at the core.

  • 4. Return the chicken and any accumulated juices to the skillet. Add the heavy cream and stir to coat everything evenly. Simmer gently for 3 to 4 minutes, until the sauce lightly thickens and clings to the ingredients. The chicken should be fully cooked through, tender, and no longer pink at the center.

  • 5. Add the spinach and fold it through for 30 to 45 seconds, just until wilted and glossy. Remove from the heat and finish with the parsley, stirring once more so the herbs remain bright.

  • Plating and serving

Spoon the skillet contents into a shallow warm bowl, keeping the chicken and vegetables evenly distributed. The sauce should sit lightly around the ingredients, not pool heavily beneath them. Serve immediately while the cream remains silky and the spinach is still vivid.

    Professional notes

Keep the cauliflower pieces small and uniform so they soften at the same rate as the mushrooms. Do not allow the cream to boil hard; a gentle simmer preserves its clean texture and prevents the sauce from tightening too aggressively. The final dish should feel balanced: tender chicken, supple vegetables, and a sauce that coats with quiet precision.
