Method

3. Strain the liquid through a fine mesh strainer into a clean chilled vessel to ensure a polished finish.
4. Add the carbon dioxide and stir very briefly for 10 to 15 seconds, just enough to integrate without losing excessive lift. The drink should be bright, lightly effervescent, and clean on the palate.
5. Transfer immediately to the chilled serving glass and serve at once.
