Mashed Potatoes with Carrots and Falukorv

HEADNOTE
This is a dish of plain-speaking comfort, made exact. The potatoes provide weight and softness, the carrots bring a quiet sweetness and color, and the falukorv gives the necessary savory depth. When handled with care, the result is balanced, supple, and complete.

RECIPE ESSENTIALS
Dish category: Savory hot dish
Cuisine or origin: Swedish-inspired home cooking
Course type: Main course
Yield: 1 serving
Serving size: 420 g
Prep time: 10 minutes
Cook time: 15 minutes
Total time: 25 minutes
Difficulty: Easy

EQUIPMENT
Small saucepan
Medium frying pan
Serving plate

INGREDIENTS
Mashed potatoes 220 g
Carrots 80 g, peeled and cut into small even pieces
Falukorv sausage 120 g, sliced into even pieces

METHOD
  • 1. Place the carrots in a small saucepan and cover them with water. Bring to a simmer over medium heat and cook for 8 to 10 minutes, until tender but still holding their shape. Drain thoroughly.

  • 2. While the carrots cook, place the falukorv in a medium frying pan over medium heat. Cook for 4 to 5 minutes, turning once, until lightly browned at the edges and heated through.

  • 3. Warm the mashed potatoes gently in a clean saucepan over low heat for 3 to 4 minutes, stirring only as needed, until smooth, hot, and supple. Do not allow them to dry out.

  • 4. Fold the drained carrots through the mashed potatoes just enough to distribute them evenly without breaking them down. The mixture should remain soft and coherent, with visible pieces of carrot.

  • 5. Arrange the potato and carrot mixture on a warm plate and place the falukorv alongside it. Serve immediately while the sausage is hot and the mash is creamy.

  • PLATING AND SERVING
Shape the mash into a neat mound or broad oval. Set the falukorv beside it in a controlled line, allowing the color contrast to remain clear. The plate should read as simple, warm, and deliberate.

    PROFESSIONAL NOTES
Keep the carrots distinct; overcooking will dull both their flavor and the dish’s structure. The mash should be hot and smooth before the carrots are added. Browning the falukorv lightly improves its savor without making it dry.
