Ingredients


Cooked white rice, cold and loose: 180 g
Firm tofu: 80 g
Egg: 50 g
Onion, finely diced: 40 g
Scallion, thinly sliced: 15 g
Soy sauce: 20 g
Chili sauce: 10 g
Vegetable oil: 20 g

Method


  • 1. Cut the tofu into 1 cm cubes. Pat it dry with paper towels if necessary; the surface must be as dry as possible so it can brown rather than steam.


  • 2. Heat 10 g of the vegetable oil in a wok or large frying pan over medium-high heat. Add the tofu and fry for 4 to 5 minutes, turning carefully, until the surfaces are lightly golden and slightly firm. Transfer to a plate.


  • 3. Add the remaining 10 g of vegetable oil to the pan. Add the onion and cook for 2 minutes over medium-high heat, stirring regularly, until translucent at the edges and fragrant.


  • 4. Push the onion to one side of the pan. Add the egg to the cleared space and scramble for 30 to 45 seconds, just until softly set but still glossy in places.


  • 5. Add the rice and break up any compacted grains with the spatula. Stir-fry for 2 to 3 minutes over medium-high heat until the rice is hot, separate, and lightly toasted in spots.


  • 6. Add the soy sauce and chili sauce. Toss continuously for 1 minute so the rice is evenly seasoned and tinted, with no wet patches remaining.


  • 7. Return the tofu to the pan and add the scallion. Stir for 30 seconds, just until the scallion is bright and aromatic and the tofu is heated through. The finished rice should be cohesive, savory, and dry enough to mound cleanly.


  • Plating and serving


    Mound the fried rice in a warm shallow bowl or plate. Keep the tofu visible at the surface and finish with the scallion distributed evenly throughout. The final dish should read as glossy but not greasy, with distinct grains and clean edges.

    Professional notes


    Cold rice is essential; warm rice will collapse under the sauce and lose definition. Brown the tofu before the rice enters the pan, or it will never recover its texture. The final toss must be brief and decisive so the rice remains separate and the egg stays tender.
