Fromage d’Exception with Sourdough, Honeycomb, and Citrus Cocktail

A composed cheese service should be exacting, not abundant. Here, the softness of brie, the saline force of blue cheese, and the layered depth of washed-rind, semi-hard, and hard cow’s milk cheeses are set against warm bread, cool butter, and the clean sweetness of honeycomb. The citrus cocktail, sharpened with orange peel, lifts the plate and keeps the richness in balance.

Recipe essentials

  • Dish category: Cheese plate

  • Cuisine or origin: French-inspired

  • Course type: Starter or light sharing course

  • Yield: 2 servings

  • Serving size: 251 g per serving

  • Prep time: 15 minutes

  • Cook time: 6 minutes

  • Total time: 21 minutes

  • Difficulty: Easy

  • Equipment

  • Cheese knife

  • Small saucepan

  • Toaster or oven

  • Serving board or large chilled plate

  • Small glass for the cocktail

  • Ingredients

    Cheese and accompaniments

  • 60 g brie cheese

  • 40 g blue cheese

  • 40 g semi-hard cow milk cheese

  • 40 g hard cow milk cheese

  • 40 g washed-rind cheese

  • 20 g butter, softened

  • 80 g sourdough bread

  • 30 g honeycomb

  • Citrus cocktail

  • 100 g cocktail

  • 10 g orange peel

  • Method

  • 1. Remove the cheeses from refrigeration and hold them at room temperature for 20 minutes. The brie should soften slightly at the centre, while the blue cheese and aged cheeses remain structured and slice cleanly.

  • 2. Warm the sourdough bread in a toaster or oven at 180°C for 4 to 6 minutes, just until the crust is crisp and the interior is supple. Do not colour it deeply; the bread should support the cheeses, not dominate them.

  • 3. Slice or portion the semi-hard cow milk cheese, hard cow milk cheese, and washed-rind cheese into neat pieces that will hold their shape on the plate. Leave the brie whole or cut it into even wedges. Crumble the blue cheese lightly if needed so it can be served with precision.

  • 4. Spread the softened butter in a small, clean mound or quenelle beside the bread. Place the honeycomb in a single intact piece so its structure remains visible and the waxy cells are undisturbed.

  • 5. Pour the cocktail into a chilled glass and finish with the orange peel. Express the peel over the surface to release its oils, then place it neatly in the drink.

  • 6. Arrange the cheeses on the board or plate in a deliberate sequence from mild to strong. Keep space between each element so the eye reads the composition clearly. Add the bread, butter, and honeycomb as supporting elements rather than decoration.

  • Plating and serving

Serve the cheeses at cool room temperature, with the bread still warm. Present the cocktail separately, close enough to feel part of the service but not so near that it crowds the plate. The final composition should feel balanced, composed, and quietly luxurious.

    Professional notes

  • Temperature is decisive: too cold and the cheeses taste closed; too warm and the plate loses structure.

  • Keep the bread crisp at the crust and tender within; this contrast is essential.

  • The honeycomb should remain intact until service, so its texture and clarity are preserved.
