  • Ingredients


  • 220 g cooked rice, preferably day-cooked and separate

  • 90 g chicken and/or sausage, cooked and cut into bite-sized pieces

  • 30 g bell pepper, onion, and celery mix, finely diced

  • 10 g tomato-based seasoning broth


  • Method


  • 1. Place the sauté pan over medium heat. Add the bell pepper, onion, and celery mix and warm for 2 minutes, stirring steadily, until fragrant and lightly softened but not browned.

  • 2. Add the chicken and/or sausage and cook for 2 minutes, turning the pieces through the vegetables until the surface is hot and the mixture smells savory and rounded.

  • 3. Add the cooked rice and fold it through the pan for 2 minutes, breaking up any clumps with the spoon. The grains should separate cleanly and take on the aroma of the vegetables and meat.

  • 4. Pour in the tomato-based seasoning broth and continue to fold for 1 to 2 minutes, just until the rice is evenly coated and heated through. The finished jambalaya should be moist but not wet, with each grain distinct and lightly glazed.

  • 5. Remove from the heat immediately and let stand for 1 minute before plating. This brief pause allows the texture to settle and the seasoning to integrate.


  • Plating and serving


    Mound the jambalaya in the center of a warm shallow bowl or plate, keeping the edges clean. Shape it lightly rather than compressing it, so the rice remains airy and the meat is visible throughout. Serve immediately while the grains are hot and separate.
