INGREDIENTS

For the fries
  • Potato, peeled and cut into fries: 260 g

  • Vegetable oil: 40 g

  • Salt: 3 g

  • For the double cheeseburger
  • Wheat bun: 70 g

  • Beef patty: 2 pieces, 90 g each

  • American cheese: 2 slices, 20 g each

  • Pickle, sliced: 12 g

  • Onion, finely diced: 10 g

  • Ketchup: 18 g

  • Mustard: 6 g

  • For the drink
  • Carbonated soft drink: 170 g

  • METHOD

  • 1. Prepare the fries. Rinse the cut potato in cold water until the water runs mostly clear, then drain well and dry thoroughly with paper towels. Moisture will prevent proper browning.

  • 2. Heat the vegetable oil in a medium saucepan to 175°C. Fry the potato in batches for 6 to 8 minutes, turning as needed, until pale golden and crisp at the edges. Remove to a tray lined with paper towels and season immediately with the salt. The fries should be crisp outside and tender within.

  • 3. Heat a heavy skillet or griddle over medium-high heat until hot. Place the beef patties on the surface and cook for 2 to 3 minutes on the first side, then turn and cook for 2 minutes on the second side. The patties should be well browned, with the center cooked through and the surface still juicy.

  • 4. During the final minute of cooking, place one slice of American cheese on each patty and allow it to soften and melt slightly. The cheese should relax over the meat without fully running off.

  • 5. Split and warm the wheat bun briefly in the skillet or on the griddle, cut side down, for about 30 seconds, just until lightly toasted and supple.

  • 6. Assemble the burger. Spread the ketchup on the bottom bun and the mustard on the top bun. Layer the first cheesed patty on the bottom bun, then add the pickle and onion. Place the second cheesed patty on top and close with the bun lid. Press lightly so the burger holds its shape without collapsing.

  • 7. Pour the carbonated soft drink into a chilled glass and serve immediately while the fry crust remains crisp and the burger is hot.

  • PLATING AND SERVING
Place the double cheeseburger slightly off center on the plate, with the fries arranged neatly beside it rather than beneath it. Serve the soft drink separately in a clean glass. The meal should read as compact, direct, and complete.

    PROFESSIONAL NOTES
Dry potatoes thoroughly before frying; surface moisture is the enemy of crispness. Do not overcrowd the oil, or the fries will soften and color unevenly. Keep the burger assembly tight and deliberate so the bun remains structured and the condiments stay in balance.
