Method



  • 1. Place the milk in a small mixing bowl. Add the milk protein and whisk for 30 seconds until fully dispersed and no dry pockets remain.


  • 2. Sift in the cocoa powder, stabilizer, flavoring, sweetener, vitamin D, and calcium. Whisk steadily for 45 to 60 seconds until the mixture is smooth, uniform, and slightly thickened.


  • 3. Pass the drink through a fine sieve into a 250 g bottle or serving glass. The texture should be glossy and free of visible granules.


  • 4. Chill for 15 minutes if a colder service is desired, then stir once before serving. The finished drink should pour cleanly and coat the glass lightly.
