  • 1 sesame bun, split

  • 2 beef patties, 90 g each

  • 2 cheddar cheese slices, 20 g each

  • 15 g ketchup

  • 10 g mustard

  • 10 g pickle, sliced


  • Method



  • 1. Heat a heavy skillet or flat griddle over medium-high heat until evenly hot, about 3 minutes. The surface should be hot enough to sear the patties immediately without smoking aggressively.


  • 2. Place the beef patties on the hot surface and cook for 3 minutes on the first side. The underside should develop a deep brown crust before the patties are turned.


  • 3. Turn the patties and cook for 2 minutes on the second side. Lay the cheddar cheese over both patties during the final minute so it softens and begins to melt, becoming glossy and supple.


  • 4. Split the sesame bun and place it cut-side down on the edge of the skillet or on a separate dry surface for 30 to 45 seconds, just until lightly warmed and faintly toasted. The bun should remain tender, not brittle.


  • 5. Spread the ketchup on the bottom bun and the mustard on the top bun. Arrange the pickles over the ketchup so their acidity is distributed at the base of the burger.
