Potato and Vegetable Soup

A simple, classic vegetable soup built around potatoes, carrots, onion, and leek simmered in olive oil and seasoned with salt. This resembles a basic rustic potato soup or vegetable soup.

Ingredients


  • Potatoes, 250 g

  • Carrots, 90 g

  • Onion, 70 g

  • Leek, 60 g

  • Olive oil, 20 g

  • Salt, 30 g

    Instructions


  • 1. Peel and dice the potatoes and carrots. Slice the onion and leek.

  • 2. Heat the olive oil in a pot over medium heat.

  • 3. Add the onion and leek, and cook until softened.

  • 4. Add the carrots and potatoes, then stir to coat in the oil.

  • 5. Add enough water to cover the vegetables, season with salt, and bring to a boil.

  • 6. Reduce the heat and simmer until all vegetables are tender.

  • 7. Serve hot as a soup, either chunky or lightly blended if desired.
