    Method


  • 1. Wash the orange well. Cut into pieces, removing any seeds, then finely chop or blend depending on your preferred texture.

  • 2. Lightly crush the assorted peppercorns.

  • 3. Combine the orange, vinegar, water, mustard seeds, crushed peppercorns, and salt in a saucepan.

  • 4. Bring to a gentle simmer over medium heat and cook for 10 to 15 minutes, until the orange softens and the mixture slightly thickens.

  • 5. Stir in the whole-grain Dijon mustard and cook for 2 to 3 minutes more, stirring regularly.
