A high-protein chocolate-coated bar with crisp soy pieces and a chewy, sweet interior. It resembles a commercial protein snack bar rather than a traditional home-cooked dish.

Ingredients


For 1 bar, total 55 g

  • Milk protein, 12 g

  • Collagen hydrolysate, 6 g

  • Soy protein, 5 g

  • Whole milk powder, 4 g

  • Polydextrose, 7 g

  • Sweeteners, 4 g

  • Glycerol, 3 g

  • Cocoa mass, 4 g

  • Cocoa butter, 3 g

  • Sunflower oil, 2 g

  • Palm kernel oil, 1.5 g

  • Crispy soy pieces, 2 g

  • Natural flavors, 0.8 g

  • Salt, 0.2 g

  • Emulsifier, 0.5 g


  • Instructions


  • 1. Mix the milk protein, collagen hydrolysate, soy protein, whole milk powder, polydextrose, sweeteners, glycerol, natural flavors, salt, and emulsifier until evenly combined.

  • 2. Fold in the crispy soy pieces.

  • 3. Melt the cocoa mass, cocoa butter, sunflower oil, and palm kernel oil together until smooth.

  • 4. Shape the protein mixture into a compact bar.

  • 5. Coat or enrobe the bar with the melted chocolate mixture.

  • 6. Chill until set, then serve.
