Raspberry Chocolate Bar

A simple chocolate confection made with milk and dark chocolate, flavored with raspberry. It resembles a flavored chocolate bar or chocolate confection rather than a baked dessert.

Ingredients


  • 60 g milk chocolate

  • 50 g dark chocolate

  • 20 g raspberries

  • 8 g sugar

  • 7 g cocoa butter

  • 3 g cocoa mass

  • 1 g whole milk powder

  • 0.5 g emulsifier

  • 0.5 g vanilla


  • Total: 150 g

    Instructions


  • 1. Gently melt the milk chocolate, dark chocolate, and cocoa butter together over low heat or in a bain-marie.

  • 2. Stir in the cocoa mass, whole milk powder, sugar, emulsifier, and vanilla until smooth.

  • 3. Fold in the raspberries carefully, keeping some texture if desired.

  • 4. Pour the mixture into a lined mold or tray and level the surface.

  • 5. Chill until fully set, then unmold and slice or break into pieces.
