A bold, savory marinated pork dish featuring garlic, soy sauce, chili oil, and warming spices. It is best served as a raw marinated preparation only if the pork is handled safely and sourced for raw consumption; otherwise, it should be cooked.

Ingredients
  • Pork shoulder: 750 g

  • Garlic: 30 g

  • Chili oil: 60 ml

  • Soy sauce: 40 ml

  • Red chili flakes: 5 g

  • Black pepper: 3 g

  • Salt: 7 g

  • Sugar: 5 g


  • Total weight: 900 g

    Instructions
  • 1. Finely mince the garlic.

  • 2. In a bowl, combine garlic, chili oil, soy sauce, red chili flakes, black pepper, salt, and sugar.

  • 3. Add the pork shoulder and mix thoroughly until evenly coated.

  • 4. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

  • 5. Serve chilled or at room temperature if intended as a raw marinated dish, or cook the pork thoroughly before serving if desired.
