Method
1. In a mixing bowl, combine the lukewarm water and yeast. Stir briefly and leave for 5 minutes, until the surface looks lightly foamy and the yeast is active.
2. Add the wheat flour and salt. Mix until a rough dough forms, then knead for 6 to 8 minutes until smooth, elastic, and no longer sticky. The dough should feel supple and resilient under the hand.
3. Cover the dough and rest it at room temperature for 45 minutes, until it has relaxed and risen slightly. It should not double; it only needs to become softer and more extensible.
4. Heat the oven to 240°C and line a baking tray with parchment paper.
5. In a small bowl, combine the olive oil and za’atar seasoning. Stir to a loose, fragrant paste.
6. Roll the dough into a thin round or oval, about 18 cm across, keeping the thickness even so it bakes uniformly.
7. Transfer the dough to the lined tray. Brush the surface evenly with the za’atar oil, leaving only a narrow border bare. Scatter the sesame seed over the top so it adheres to the oil.
8. Bake for 8 to 10 minutes, until the bread is set, the edges are lightly browned, and the surface shows a few deep golden spots. The center should remain tender rather than dry.
