A high-protein composed salad of seasoned chicken breast, roasted sweet potato, cottage cheese, cucumber, and leafy greens. It resembles a simplified chicken sweet potato salad bowl with a light olive oil and herb seasoning.

  • 160 g chicken breast

  • 120 g sweet potato

  • 80 g cottage cheese

  • 60 g cucumber

  • 50 g leafy greens

  • 15 g olive oil

  • 5 g salt

  • 5 g black pepper

  • 5 g dried herbs


  • Step-by-step instructions


  • 1. Preheat the oven to 200°C.

  • 2. Peel and cut the sweet potato into bite-sized cubes. Toss with half of the olive oil, a little salt, black pepper, and some dried herbs.

  • 3. Roast the sweet potato for 20–25 minutes until tender and lightly browned.

  • 4. Season the chicken breast with salt, black pepper, and dried herbs.

  • 5. Heat a pan over medium heat with the remaining olive oil and cook the chicken for 5–6 minutes per side, or until fully cooked. Rest for 5 minutes, then slice.

  • 6. Slice the cucumber and prepare the leafy greens.

  • 7. Assemble the bowl with leafy greens, roasted sweet potato, cucumber, sliced chicken, and cottage cheese.

  • 8. Finish with any remaining seasoning to taste and serve warm or chilled.
